Grilled Pork Loin Sub
Looking for a great sandwich to serve family and friends for a weekend get together or even brunch? Look no farther! The star of this dish is the Smithfield Roasted Garlic and Cracked Black Pepper Pork Tenderloin. It comes already marinated for you (easy peasy!) and cooks in minutes. The rest of the flavors I themed a bit around breakfast (I love holiday brunches with family) so you'll find a roasted garlic (to play on the pork), maple cream cheese spread and an optional fried egg topper! Enjoy!
1/3 - 1/2 of a 1.15 oz package of Smithfield Roasted Garlic and Cracked Black Pepper Pork Tenderloin, cut into 1/4" - 1/2" rounds
Olive or vegetable oil
Cream Cheese Spread
3 heads roasted garlic*
4 oz cream cheese at room temperature
2 tbsp + 1 tsp maple syrup
1/2 tsp sea or kosher salt
1/4 red onion, sliced into long strips
1 tablespoon extra virgin or vegetable oil
1 cup arugula (I think the peppery-ness compliments the pork but feel free to use your lettuce of choice such as bibb or romaine)
1 roma tomato, cut the long way into 1/4" slices
1 hoagie (hero) roll, halved the long way
Optional: 1 or 2 eggs sunny side up
1 head garlic
2 - 3 tablespoons extra virgin olive oil
Cream Cheese Spread
In a small mixing bowl, smush the roasted garlic cloves with the back of a spoon.
Add in the cream cheese, maple syrup and salt and whisk everything together until smooth. (You can also achieve both steps 1 and 2 in a food processor).
Prime your grill by rubbing oil onto it so that the pork won't stick. (I usually wet a paper towel with oil and rub the grill surface until it's properly oiled).
Bring your grill up to high heat. Once hot, place the pork on the grill and cook about 4-5 minutes per side. (You should achieve great grill marks and get lots of sizzling action). Remove from heat and set aside.
Add a tablespoon of oil into a small skillet over medium high heat. Sauté the onions for about 10 minutes until caramelized, stirring frequently. Set aside.
To build your sandwich, lather both sides of the hoagie bun with your cream cheese spread. Then top with your tomato slices, followed by the caramelized onions, then the arugula and then the pork. If adding a fried egg or two, top the pork with your egg(s) and then the top bun. Slice the hoagie in half and serve with tots or your favorite side dish!
Preheat your oven to 400 degrees F.
Peel away as much of the garlic's papery outside as possible without pulling apart all the cloves.
Trim off the top of the head of garlic and drizzle with olive oil (on top of the exposed heads).
Wrap the garlic in aluminum foil and bake for 40-45 minutes.
