The Hatch Chile Burger
If you've been to New Mexico during chile season, you have a good understanding of how important these peppers are to its food culture. You can find them in everything from empanadas to pizza to ice cream--and each dish is more delicious than the last. When tailgating in the great southwest (or anywhere else for that matter), this burger is probably your best bet for experiencing chiles in full effect.
3 oz roasted hatch chiles
1 (5oz) beef patty
Salt & pepper
2 slices American cheese
1 hamburger bun
1 healthy smear of mayo
Mayo (for the insides of the bun)
To Make the Burger:
Turn your grill on high.
Season both sides of the burger patty with salt & pepper.
Sear one side of the burger patty on the grill.
Flip, top the patty with the roasted and minced chilis, then top with the cheese.
To build the burger, start by smearing some mayo on the insides of the bun.
Then place both burger patties on the bottom bun, then the cheese burger, and top with the bun.
Roasted Hatch Chiles - Roast 2-3 hatch chilis in a 400 degree oven for 10 minutes. Set aside to cool, then mince.
